The ultimate indulgent burger? Pair these blue cheese burgers with a glass of dark, jammy Dark Horse Merlot.
Makes 6 burgers
170g blue cheese, crumbled
2 tablespoons mayonnaise
2 tablespoons coarsely chopped parsley
1 tablespoon finely chopped chives
900g minced beef
Salt and freshly ground black pepper
2 small red onions cut in slices
6 potato or other soft rolls, split
Pre warm the grill to 250ᵒC or use a BBQ.
Make the blue cheese spread by mashing the cheese and mayonnaise with a fork. Add the parsley and chives and season to taste with salt and pepper.
Form the ground beef into six 150g patties, about 12cm wide, and season generously on both sides with salt and pepper.
Grill the burgers and onions, turning both just once, until the burgers are done to your liking and the onions are tender (the onions may take longer). Remove both from the heat and allow to rest while you toast the buns.
Spread the blue cheese mixture on the bun tops, place the burgers on the bottom buns, and top each burger with the grilled onions. Serve immediately.
